The leadership of the Gamlin Restaurant Group is committed to operating restaurants that have a positive impact on the community and the planet.
For the second year in a row, Sub Zero Vodka Bar and its sister restaurant, Gamlin Whiskey House, are certified Green Dining Alliance (GDA) establishments.
The Green Dining Alliance, a program of St. Louis Earth Day, works with restaurants to reduce their environmental impact through practical, pragmatic, cost-effective strategies. The Gamlin Restaurant Group has appointed a team of employees to ensure they are meeting the standards set by the GDA.
“Our Green Team is a group of employees who are always looking for new ways to make our restaurants more environmentally friendly, and ensure we can keep our GDA status,” owner Lucas Gamlin says.
The restaurant group is committed to the GDA core concepts which include banning Styrofoam and #6 plastics, recycling restaurant waste, phasing in CFL or LED light bulbs, sharing utility data and goals for tracking improvements over time, and participating in at least two GDA workshops annually. In addition to meeting these standards they locally source products such as Chauvin Coffee, Moondance Farm grass-fed beef, cheeses from Fox River Dairy and locally brewed tap beers. The restaurant group also bakes all of its bread in-house at Gamlin Whiskey House which reduces the environmental impact of packaging and shipping.
“We also compost at both restaurants and use a local water filtration system, which provides guests with filtered water in chilled glass bottles at each table. This small change alone has conserved around six ounces of water per guest,” Gamlin says.
